Crockpot ideas for leftover chicken?

Hello all -

I'm looking for ideas for making use of leftover fried chicken. We found that our local grocery store has yummy fried chicken in their deli - the problem is that the "meal" we get is too much for our family. Leftover chicken is not my favorite thing - never tastes as good the second time around...but I thought MAYBE someone might have a crockpot recipe that calls for chicken and I could use it that way....anyone?

I don't know about a crock pot recipe but I know that leftover fried chicken makes great chicken salad. I use a Magic Bullet to make it but any food processor will make the right consistency. Or if you just chop it up, that could work too.

I've got a bunch. Here are a couple favorites:

Southwestern Chicken and White Bean Soup
1 Tbsp. veg. oil
1 lb. bnls. sknls. chicken breasts, cut into 1 inch pieces
1 can (14 oz.) chicken broth
1 cup chunky salsa
3 cloves garlic, minced
1 can (16 ozs.) small white beans, rinsed and drained
1 cup frozen whole kernel corn
1 lg. onion, chopped

Brown chicken in oil (obviously you'd skip this since your chicken is already cooked).
Mix all ingredients in crock pot.
Cook on low 8-10 hours or high 4-5 hours.


Jambalaya
2 cups chicken broth
1 tsp. creole seasoning (recipe actually calls for a tablespoon but that's too spicy for us)
1 green pepper, diced
1 onion, diced
2 celery stalks, diced
1 can diced tomatoes (14 1/2 ozs.)
1 pkg. sausage, diced (optional)
1 lb. bnls. sknls. chicken, cut into cubes
1 cup uncooked regular long-grain white rice

Mix all ingredients in crock pot. Cook on low 7-8 hours or on high 4-5 hours. This works better on low all day- I've done it on high for the shorter time- it still works but comes out a little soggy- still good though.

Hey CAB!

We just eat the left over fried chicken, dear hubby can eat it cold! I do like to use left over rotisserie or whole chicken for soups, chicken salad, fajitas, or just pull off the bone and add some BBQ sauce (we love Famous Dave's). Be blessed!

I've been making chicken and dumplings with leftover chicken. Not sure if you could do this in a crockpot, but it's really easy to do on the stovetop. I just googled it and found a recipe that sounded good.
